MUSHROOM FRIED RICE

This Mushroom and Avocado Fried Rice is a fantastic way to transform leftover rice into a hearty, flavorful meal. While traditional fried rice is a staple, the addition of creamy avocado and savory mushrooms provides a unique, modern twist on a classic comfort dish.

Note on Ingredients: To keep this truly Vegan, simply omit the egg and ensure you use a Vegan Mushroom Oyster Sauce.


Savory Mushroom & Avocado Fried Rice

A quick, nutritious, and protein-packed stir-fry using fresh vegetables and umami-rich mushrooms.

The Ingredients

  • 2 cups Cooked rice (chilled/leftover rice works best)

  • 5 Mushrooms (roughly chopped)

  • 1/3 cup Avocado (diced)

  • 1/3 cup Carrots (finely chopped)

  • 1/3 cup Green beans (chopped)

  • 1 Egg (optional)

  • 1 medium Onion (chopped)

  • 5 cloves Garlic (finely chopped)

  • 1 1/2 tbsp Oyster sauce (or Vegan mushroom sauce)

  • 2 tbsp Soy sauce

  • A pinch of White pepper

  • Optional: A splash of vinegar for tang; leftover chicken or meat for extra protein.


Preparation Steps

1. Sauté the Aromatics

Heat oil in a large skillet or wok over medium-low heat. Add the chopped garlic and sauté until fragrant and golden. Add the onions and stir-fry until they become soft and translucent.

2. Stir-Fry the Vegetables

Toss in the carrots and green beans. Sauté for about 3 minutes to ensure they are tender but still have a slight crunch. Add the chopped mushrooms and a tiny splash of water to help them cook. Simmer for 5 minutes over medium heat until the mushrooms are tender.

3. Season and Enrich

Pour in the oyster sauce and soy sauce (and vinegar, if using). Stir well to combine the flavors. Gently fold in the diced avocado and any leftover cooked meat/chicken you may have. Stir for 2 minutes to allow the flavors to meld.

4. The Rice Mix

Add the cooked rice to the pan. Use your spatula to break up any clumps and toss continuously until every grain is evenly coated in the savory sauce.

5. The Egg Finish

Clear a small space in the center of the rice and crack in the egg. Let it sit for about 3 minutes until it is fully set, then scramble it into the rice. Finish by sprinkling a dash of white pepper over the dish and giving it one final, thorough toss.


Chef’s Tips

  • The Avocado: Add the avocado toward the end and stir gently to keep the pieces intact; it provides a wonderful creamy contrast to the firm rice.

  • Why Leftover Rice? Freshly cooked rice can become mushy when stir-fried. Using "day-old" rice that has been refrigerated ensures the grains stay separate and absorb the sauces perfectly.
